Zucchini together with acorn squash and other members of the squash and pumpkin families, zucchini contain loads of anti-cancer carotenoids, particularly beta-carotene. These foods are all naturally sweet, easy to eat and digest, and are versatile. Mash, make into soup, bake or stir-fry; take your pick.
